NOO­DLES WITH PORK AND VEGETABLE RIB­BONS

SERVES 4 Prepa­ra­tion time: 10 min Cook­ing time: 15 min

1 Cook the noo­dles in boil­ing wa­ter un­til just done Drain and rinse un­der cold wa­ter 2 Heat the oil in a fry­ing pan and fry the pork strips in batches un­til done Add the gar­lic and two kinds of soy sauce and mix well 3 Add the noo­dles, car­rot and cu­cum­ber strips and bean sprouts ( if us­ing) to the pork Stir- fry for 1 minute or un­til heated through – the veg­eta­bles should still be crisp Serve with fresh co­rian­der, if pre­ferred

250 g egg noo­dles 15 ml ( 1 T) oil 500 g pork strips 2 gar­lic cloves, crushed 45 ml ( 3 T) sweet soy sauce 15 ml ( 1 T) soy sauce 3 car­rots, scraped and cut into rib­bons ½ cu­cum­ber, cut into rib­bons 125 g bean sprouts ( op­tional)
