BRUSSELS SPROUTS AND BA­CON SALAD

SERVES 4 Prepa­ra­tion: 15 min Cook­ing: 10- 15 min

250 g ba­con 60 ml ( ¼ c) sweet chilli sauce 300 g Brussels sprouts 300 g spinach, trimmed and shred­ded 4 eggs, boiled or poached

SALAD DRESS­ING

60 ml ( ¼ c) olive oil 30 ml ( 2 T) lemon juice 2 ml ( ½ t) Di­jon mus­tard pinch of sugar salt and freshly ground pep­per

Pre­heat the oven to 200 ° C Put a wire rack on a bak­ing sheet and grease with non­stick spray 1 Brush the ba­con with the sweet chilli sauce and ar­range in a sin­gle layer on the pre­pared wire rack Bake for 10- 15 min­utes or un­til done and the edges are seared 2 Finely slice the Brussels sprouts, trans­fer to a mix­ing bowl and mix with the spinach 3 Salad dress­ing Whisk to­gether the oil, lemon juice, mus­tard and sugar and sea­son with salt and pep­per Pour over the Brussels sprout salad 4 Spoon the salad onto a plat­ter and pile the ba­con on top Add the eggs and serve
