PA­PRIKA CHICKEN WITH CHARRED MEALIES

4- 6 chicken pieces salt and freshly ground black pep­per 20 ml ( 4 t) smoked pa­prika 15 ml ( 1 T) olive oil

MEALIES

4 sweet corn on the cob salt 2 red chill­ies, finely chopped 10 g fresh co­rian­der, chopped

SAUCE

60 ml ( ¼ c) sour cream 15 ml ( 1 T) lime or lemon juice salt and freshly ground black pep­per

Pre­heat the oven to 200 ° C Put a wire rack on a bak­ing sheet and grease with non­stick spray 1 Sea­son the chicken pieces with salt, pep­per and smoked pa­prika Brush with the olive oil and ar­range on the wire rack 2 Roast the chicken for 45 min­utes or un­til done and crisp 3 Mealies Cook the mealies for 10 min­utes or un­til nearly done Sear on a heated grid­dle pan or over hot coals Sea­son with salt and scat­ter the chill­ies and co­rian­der on top 4 Sauce Mix the ingredients and sea­son with salt and pep­per Driz­zle the sauce over the mealies and serve with the chicken
