4- 6 chicken breasts 30 ml ( 2 T) gar­lic and herb sea­son­ing 60 ml ( ¼ c) chopped fresh pars­ley zest of 1 lemon 30 ml ( 2 T) olive oil

TAB­BOULEH

250 ml ( 1 c) bul­gur 100 g cherry toma­toes, quar­tered ½ cu­cum­ber, diced 4 spring onions, chopped 60 ml ( ¼ c) chopped fresh pars­ley 45 ml ( 3 T) olive oil 60 ml ( ¼ c) chopped fresh mint

Pre­heat the oven to 200 ° C 1 Put the chicken breasts be­tween two large sheets of bak­ing pa­per and flat­ten slightly with the heel of your hand 2 Sea­son with the gar­lic and herb sea­son­ing, scat­ter the pars­ley and lemon zest on top and brush with the oil salt and freshly ground pep­per 15- 30 ml ( 1- 2 T) lemon juice 3 Ar­range the chicken on a bak­ing sheet and grill for 15- 20 min­utes or un­til done 4 Tab­bouleh Pre­pare the bul­gur ac­cord­ing to the packet in­struc­tions Mix with the re­main­ing ingredients, sea­son­ing to taste with salt, pep­per and lemon juice 5 Serve the tab­bouleh with the grilled chicken and more fresh mint ( if pre­ferred)
