■ Freeze fresh fish if you won’t eat it within a day or two: wrap tightly in plas­tic, place in a plas­tic bag and put the bag in the freezer.

■ Don’t braai left­over fish again or re­heat in the mi­crowave – it will dry out and leave a strong fishy smell in your kitchen. ■ Ideas for left­over fish: Bake fish cakes, add the fish to soup, make a pâté ( blend it with fresh herbs and yo­ghurt, sour cream, cot­tage cheese or a lit­tle but­ter), or make a kedgeree ( heat the fish with cooked rice, curry, fried spring onions, pars­ley, boiled eggs and a lit­tle cream).
