SWEET POTATO CUBES

4 or­ange sweet pota­toes, scrubbed and cubed 45 ml ( 3 T) olive oil salt and freshly ground pep­per 10 g co­rian­der

FISH

400 g fish fil­lets ( 4 por­tions) 30 ml ( 2 T) olive oil

VINAI­GRETTE

10 g pars­ley, finely chopped 10 g co­rian­der, finely chopped 1 gar­lic clove, crushed 45 ml ( 3 T) olive oil 30 ml ( 2 T) lemon juice

Pre­heat the oven to 200 ° C 1 Sweet potato cubes Spread the sweet potato cubes on a bak­ing sheet Driz­zle with the oil and sea­son with salt and pep­per Bake for 25- 30 min­utes or un­til done 2 Fish Sea­son the fish fil­lets with salt and pep­per Heat the oil in a pan and fry the fish for 8- 10 min­utes or un­til done 3 Vinai­grette Mix the ingredients and pour over the hot fish 4 Serve the fish with the sweet potato cubes and freshly chopped co­rian­der, if pre­ferred
