WARM CALA­MARI AND BA­CON SALAD

SERVES 4 Prepa­ra­tion time: 15 min Cook­ing time: 20- 25 min

125 g streaky ba­con 15 ml ( 1 T) olive oil 4 cala­mari steaks, cut into strips 15 ml ( 1 T) lemon pep­per 1 head of let­tuce, sep­a­rated into leaves

DRESS­ING

60 ml ( ¼ c) olive oil 30 ml ( 2 T) red wine vine­gar 1 gar­lic clove, finely crushed 5 ml ( 1 t) Di­jon mus­tard 5 ml ( 1 t) fish sauce

Pre­heat the oven to 230 ° C Grease a bak­ing sheet with non­stick spray 1 Ar­range the ba­con in a sin­gle layer on the bak­ing sheet and cook in the oven for 10- 12 min­utes or un­til crisp Set aside 2 Heat the olive oil in a pan, sea­son the cala­mari with the lemon pep­per and fry the strips a few at a time in the oil un­til done and no longer glassy or translu­cent 3 Dress­ing Whisk to­gether all the ingredients and pour over the cala­mari 4 Ar­range the let­tuce leaves on a salad plat­ter and top with the warm cala­mari and ba­con 5 Pour over any re­main­ing dress­ing 6 Serve with charred lemons, if pre­ferred

The cala­mari can be re­placed with oven- baked or braaied hake Flake roughly and mix through the salad
