PEA FRITTERS WITH TZATZIKI
SERVES 4 Preparation time: 10 min Chilling time: 30 min Cooking time: 15 min
1 Fritters Cook the peas in rapidly boiling water, drain and rinse immediately under cold water. 2 Blitz the peas and remaining ingredients ( except the oil) in a food processor until just blended and the peas are still fairly coarse. Cover with clingfilm and chill for 30 minutes. 3 Heat enough oil for shallow- frying in a pan. Drop tablespoonfuls of the pea mixture in the pan and fry on both sides until golden. Drain on paper towels. 4 Tzatziki Mix the ingredients. 5 To serve Serve the fritters in tortillas with the tzatziki and fresh peas and mint, if preferred.
