1 Frit­ters Cook the peas in rapidly boil­ing wa­ter, drain and rinse im­me­di­ately un­der cold wa­ter. 2 Blitz the peas and re­main­ing ingredients ( ex­cept the oil) in a food pro­ces­sor un­til just blended and the peas are still fairly coarse. Cover with cling­film and chill for 30 min­utes. 3 Heat enough oil for shal­low- fry­ing in a pan. Drop ta­ble­spoon­fuls of the pea mix­ture in the pan and fry on both sides un­til golden. Drain on pa­per tow­els. 4 Tzatziki Mix the ingredients. 5 To serve Serve the frit­ters in tor­tillas with the tzatziki and fresh peas and mint, if pre­ferred.
