Bo­ere­wors frit­tata

Frit­tata is an Ital­ian dish made with eggs, veg­eta­bles and meat and looks like an omelette. It’s a tasty way to use left­over braaied bo­ere­wors.

Prepa­ra­tion time: 15 min­utes Cook­ing time: 10-15 min­utes Bak­ing time: 30 min­utes

15 ml (1 T) olive oil 500 g bo­ere­wors 4 pota­toes, boiled and sliced 60 ml (¼ c) caramelised onions 200 g (2 rounds) feta cheese, crum­bled 5 eggs whisked with 60 ml (¼ c) milk salt and pep­per thyme sprigs to gar­nish fresh tomato salad to serve (op­tional)

Pre­heat the oven to 200 °C. 1 Line a 20 cm cake tin with alu­minium foil. 2 Heat the oil. Fry the bo­ere­wors un­til brown and done then cut into bite-size pieces. 3 Layer the pota­toes, onions, bo­ere­wors and feta cheese in the cake tin. 4 Sea­son the egg mix­ture with salt and pep­per and pour over the in­gre­di­ents in the cake tin. 5 Bake for 30 min­utes or un­til set. Cool slightly then cut into wedges. 6 Gar­nish with thyme sprigs and serve with a fresh tomato salad, if us­ing.
