Ba­con quiche

Quiche is al­ways a good op­tion for brunch or a light lunch and the cheese and ba­con com­bi­na­tion is a win­ner.

10-12 slices

Prepa­ra­tion time: 15 min­utes Chill­ing time: 30 min­utes Cook­ing time: 45 min­utes

400 g puff pas­try 4 eggs 80-125 ml (¹⁄₃-½ c) full-cream milk salt and pep­per 250 ml (1 c) grated ma­ture Ched­dar cheese 250 g streaky ba­con onion or Parme­san sprin­kles green salad to serve

Pre­heat the oven to 190 °C. 1 Line a 20 cm pie tin with the pas­try and chill for about 30 min­utes. 2 Whisk the eggs and milk and sea­son with salt and pep­per. 3 Scat­ter the cheese over the pas­try. 4 Pour in the egg mix­ture and place the raw streaky ba­con on top. Sea­son with the sprin­kles. 5 Bake for 45 min­utes or un­til done and serve with a green salad.
