Fruit com­pote with or­ange syrup and vanilla top­ping

You can re­place the fruit in this dessert with any sea­sonal fruit.

COM­POTE

2 vanilla pods

375 ml (1½ c)

fresh or­ange juice

60 ml (¼ c) wa­ter

15 ml (1 T) sugar

5-10 ml (1-2 t) grated fresh ginger

2 or­anges, cut into seg­ments

2 guavas, peaches or plums, cut into chunks

500 g straw­ber­ries and/or other berries

VANILLA TOP­PING

250 ml (1 c) plain yo­ghurt

vanilla seeds of 1 pod

1 Com­pote Scrape the seeds out of the vanilla pods and set aside the seeds from 1 pod. Put the pods, or­ange juice, wa­ter, sugar and ginger in a pot and bring to the boil. 2 Add the fruit and re­turn to the boil. Sim­mer for about 3 min­utes un­til the fruit is soft but not mushy. Leave to cool in the syrup. 3 Vanilla top­ping Mix the yo­ghurt and re­served vanilla seeds. Serve with the com­pote.
