Fruit compote with orange syrup and vanilla topping
You can replace the fruit in this dessert with any seasonal fruit.
2 vanilla pods
375 ml (1½ c)
fresh orange juice
60 ml (¼ c) water
15 ml (1 T) sugar
5-10 ml (1-2 t) grated fresh ginger
2 oranges, cut into segments
2 guavas, peaches or plums, cut into chunks
500 g strawberries and/or other berries
250 ml (1 c) plain yoghurt
vanilla seeds of 1 pod
1 Compote Scrape the seeds out of the vanilla pods and set aside the seeds from 1 pod. Put the pods, orange juice, water, sugar and ginger in a pot and bring to the boil. 2 Add the fruit and return to the boil. Simmer for about 3 minutes until the fruit is soft but not mushy. Leave to cool in the syrup. 3 Vanilla topping Mix the yoghurt and reserved vanilla seeds. Serve with the compote.
