Fish on the coals with bulgur salad
Bulgur contains fibre and protein and is a great option for diabetics.
Preparation time: 20 minutes Standing time: 20 minutes Cooking time: 15-20 minutes
2 garlic cloves
5 ml (1 t) salt
juice and zest of 1 lemon
1 small onion, grated 1 ml (¼ t) ground cumin
pinch of paprika
10 ml (2 t) olive oil
4 fish steaks or 2 small whole fish, gutted and cleaned
250 ml (1 c) bulgur
250 ml (1 c) vegetable stock
1 each tomato, spring onion and red pepper, chopped
large handful of fresh coriander and/or parsley, chopped
splash of balsamic vinegar
salt and pepper
lemon zest and charred lemon halves to serve
1 Rub Crush the garlic cloves and salt in a mortar and pestle. Add the rest of the ingredients and mix well to form a paste.
2 Fish Rub the paste all over the fish and allow to stand for 5 minutes.
3 Braai over hot coals until done and browned on the outside.
4 Bulgur salad Put the bulgur in a bowl and pour the stock over. Set aside for 15 minutes to allow the bulgur to swell. Add the rest of the ingredients, season with salt and pepper and mix.
5 Transfer the fish to plates and serve with the bulgur salad, lemon zest and charred lemon halves.
