Fish on the coals with bul­gur salad

Bul­gur con­tains fi­bre and pro­tein and is a great op­tion for di­a­bet­ics.

4 por­tions

Prepa­ra­tion time: 20 min­utes Stand­ing time: 20 min­utes Cook­ing time: 15-20 min­utes


2 gar­lic cloves

5 ml (1 t) salt

juice and zest of 1 le­mon

1 small onion, grated 1 ml (¼ t) ground cumin

pinch of pa­prika

10 ml (2 t) olive oil


4 fish steaks or 2 small whole fish, gut­ted and cleaned


250 ml (1 c) bul­gur

250 ml (1 c) veg­etable stock

1 each tomato, spring onion and red pep­per, chopped

large hand­ful of fresh co­rian­der and/or pars­ley, chopped

splash of bal­samic vine­gar

salt and pep­per

le­mon zest and charred le­mon halves to serve

1 Rub Crush the gar­lic cloves and salt in a mor­tar and pes­tle. Add the rest of the in­gre­di­ents and mix well to form a paste.

2 Fish Rub the paste all over the fish and al­low to stand for 5 min­utes.

3 Braai over hot coals un­til done and browned on the out­side.

4 Bul­gur salad Put the bul­gur in a bowl and pour the stock over. Set aside for 15 min­utes to al­low the bul­gur to swell. Add the rest of the in­gre­di­ents, sea­son with salt and pep­per and mix.

5 Trans­fer the fish to plates and serve with the bul­gur salad, le­mon zest and charred le­mon halves.
