Chicken and tropical fruit salad
The creamy curry dressing makes this salad a taste sensation.
CREAMY CURRY DRESSING
5-10 ml (1-2 t) roasted curry powder 45 ml (3 T) canola oil 30 ml (2 T) grape vinegar 30 ml (2 T) low-fat mayonnaise salad dressing 5-10 ml (1-2 t) sugar or xylitol 5 ml (1 t) fresh ginger, finely grated
1 cos lettuce, leaves separated 1 banana, sliced ½ each pineapple, mango and pawpaw, sliced or diced 60-80 ml (¼-¹ ∕ 3 c) pomegranate arils 3 skinless chicken breast fillets, steamed and sliced
1 Dressing Mix all the ingredients.
2 Salad Pile lettuce leaves into a bowl, place the fruit, arils and chicken on top. Pour over the dressing just before serving.
