Chicken and trop­i­cal fruit salad

The creamy curry dress­ing makes this salad a taste sen­sa­tion.


5-10 ml (1-2 t) roasted curry pow­der 45 ml (3 T) canola oil 30 ml (2 T) grape vine­gar 30 ml (2 T) low-fat may­on­naise salad dress­ing 5-10 ml (1-2 t) sugar or xyl­i­tol 5 ml (1 t) fresh ginger, finely grated


1 cos let­tuce, leaves sep­a­rated 1 banana, sliced ½ each pineap­ple, mango and paw­paw, sliced or diced 60-80 ml (¼-¹ ∕ 3 c) pome­gran­ate ar­ils 3 skin­less chicken breast fil­lets, steamed and sliced

1 Dress­ing Mix all the in­gre­di­ents.

2 Salad Pile let­tuce leaves into a bowl, place the fruit, ar­ils and chicken on top. Pour over the dress­ing just be­fore serv­ing.
