Bean salad with broc­coli

Try this pro­tein-rich salad mar­i­nated in a tasty dress­ing.

Prepa­ra­tion time: 10 min­utes Stand­ing time: 1-2 hours

DRESS­ING

45 ml (3 T) spring onions, finely chopped

2 gar­lic cloves, chopped

45 ml (3 T) ap­ple cider vine­gar

10 ml (2 t) Di­jon mus­tard

45-60 ml (3-4 T) olive oil

juice and zest of 1 le­mon

15 ml (1 T) brown sugar

30 ml (2 T) chopped fresh co­rian­der

SALAD

2 cans (400 g each) can­nellini beans, drained

2 cans (400 g each) but­ter beans, drained 125 g young green beans

125 g long-stemmed broc­coli, blanched if pre­ferred

1 red onion, sliced

1 Dress­ing Mix all the in­gre­di­ents.

2 Salad Place the in­gre­di­ents in a bowl, pour the dress­ing over and leave to stand for 1-2 hours be­fore serv­ing.
