Tortillas have quite a low GI but bear in mind they can contain a lot of fat. They are best paired with healthy ingredients.
Preparation time: 10 minutes
1 wholewheat or seed tortilla 60 ml (¼ c) smooth cottage cheese handful of mixed lettuce ½ small cucumber, cut into matchsticks 90 g cooked rotisserie chicken, skin removed and shredded ¼ avocado, sliced few drops lemon juice salt and freshly ground pepper
2 baby tomatoes, chopped 1 spring onion, chopped
1 Tortilla Heat the tortilla slightly in the microwave and spread on the cottage cheese. 2 Arrange the lettuce, cucumber, chicken and avocado on top. Squeeze a few drops of lemon juice on the avocado. Season with salt and pepper. 3 Salsa Mix the tomatoes and spring onion and spoon on top of the tortilla filling. 4 Fold the filled tortilla in half, then fold in the sides. Secure with string or a cocktail stick.
