Chicken tor­tilla

Tor­tillas have quite a low GI but bear in mind they can con­tain a lot of fat. They are best paired with healthy in­gre­di­ents.

Prepa­ra­tion time: 10 min­utes

TOR­TILLA

1 whole­wheat or seed tor­tilla 60 ml (¼ c) smooth cot­tage cheese hand­ful of mixed let­tuce ½ small cu­cum­ber, cut into match­sticks 90 g cooked ro­tis­serie chicken, skin re­moved and shred­ded ¼ av­o­cado, sliced few drops le­mon juice salt and freshly ground pep­per

SALSA

2 baby toma­toes, chopped 1 spring onion, chopped

1 Tor­tilla Heat the tor­tilla slightly in the mi­crowave and spread on the cot­tage cheese. 2 Ar­range the let­tuce, cu­cum­ber, chicken and av­o­cado on top. Squeeze a few drops of le­mon juice on the av­o­cado. Sea­son with salt and pep­per. 3 Salsa Mix the toma­toes and spring onion and spoon on top of the tor­tilla fill­ing. 4 Fold the filled tor­tilla in half, then fold in the sides. Se­cure with string or a cock­tail stick.
