MAIZE MEAL PIZZA

This is a fun dish to make for the whole fam­ily and a great way to use leftover mieliepap.

4-6 por­tions Prepa­ra­tion time: 20 min­utes Cook­ing time: 20 min­utes

250 ml (1 c) maize meal 1 can (410 g) chopped toma­toes 250 g ba­con 20 ml (4 t) oil 30 ml (2 T) but­ter 2 onions, thinly sliced 30 ml (2 T) brown sugar 30 ml (2 T) bal­samic vine­gar 3 thyme sprigs 125 g mush­rooms, chopped 125 g moz­zarella cheese, grated cherry toma­toes, halved, and rocket to gar­nish

1 Pre­heat the oven to 200 °C and line a bak­ing sheet with bak­ing pa­per. 2 Make stiff pap ac­cord­ing to the maize meal packet in­struc­tions and trans­fer to the lined bak­ing sheet. Spread about 5-10 mm thick. 3 Spread the toma­toes over the base. 4 Fry the ba­con un­til crispy and set aside. 5 Heat the oil and but­ter in a pan, add the onions, sugar and vine­gar and fry un­til the onions are caramelised. Add the thyme, re­move from the heat and al­low to cool. 6 Spread the cooled onions over the tomato, fol­lowed by the ba­con, mush­rooms and fi­nally the cheese. 7 Bake for 10 min­utes. Gar­nish with fresh cherry toma­toes and rocket.
