BRAZILIAN COCONUT TARTLETS
Coconut is popular in many Brazilian desserts and adds wonderful texture and flavour.
Preparation time: 15 minutes Baking time: 30 minutes castor sugar for sprinkling 4 eggs 4 egg yolks 450 g icing sugar 100 g desiccated coconut extra coconut for sprinkling ice cream to serve (optional)
1 Preheat the oven to 180 °C. Grease 6 ramekins and sprinkle castor sugar to coat the inside.
2 Beat the eggs and egg yolks together until smooth. Beat in the icing sugar and add the coconut. 3 Pour the mixture into the prepared ramekins. 4 Put the ramekins in an ovenproof dish and pour boiling water to about halfway up the sides of the ramekins. Bake for 30 minutes or until done and set. 5 Sprinkle extra coconut on top and return to the oven until the coconut has just browned. 6 Allow to cool completely. Serve with ice cream (if using).
