Co­conut is pop­u­lar in many Brazil­ian desserts and adds won­der­ful tex­ture and flavour.

Prepa­ra­tion time: 15 min­utes Bak­ing time: 30 min­utes cas­tor sugar for sprin­kling 4 eggs 4 egg yolks 450 g ic­ing sugar 100 g des­ic­cated co­conut ex­tra co­conut for sprin­kling ice cream to serve (op­tional)

1 Pre­heat the oven to 180 °C. Grease 6 ramekins and sprin­kle cas­tor sugar to coat the in­side.

2 Beat the eggs and egg yolks to­gether un­til smooth. Beat in the ic­ing sugar and add the co­conut. 3 Pour the mix­ture into the pre­pared ramekins. 4 Put the ramekins in an oven­proof dish and pour boiling wa­ter to about half­way up the sides of the ramekins. Bake for 30 min­utes or un­til done and set. 5 Sprin­kle ex­tra co­conut on top and re­turn to the oven un­til the co­conut has just browned. 6 Al­low to cool com­pletely. Serve with ice cream (if us­ing).
