NUT AND FRUIT COOKIES
You can use any type of dried fruit in these crunchy cookies.
About 20 cookies Preparation time: 15 minutes Baking time: 10 minutes
cornflour for sprinkling 250 ml (1 c) ground almonds 250 ml (1 c) mixed nuts, roughly chopped 250 ml (1 c) dried fruit such as cranberries and Turkish apricots, chopped 500 ml (2 c) desiccated coconut pinch of salt 150 ml honey 7 egg whites melted dark chocolate to drizzle
Preheat the oven to 180 °C. Grease a baking sheet with nonstick spray and dust lightly with cornflour. 2 Mix together the almonds, nuts and dried fruit with the coconut, salt and honey. 3 Whisk the egg whites until stiff and fold into the nut mixture. 4 Spoon heaps of the mixture on the prepared baking sheet and flatten slightly. 5 Bake for 10 minutes or until the edges are lightly browned. Transfer to a wire rack while hot and leave to cool. Drizzle melted chocolate over.
