Fried fish with pineapple salsa
The pineapple salsa gives the fish a fresh, tropical taste.
1 pineapple, diced or cut into matchsticks 1 small onion, chopped 1 red pepper, diced 1 jalapeño chilli, chopped 15 ml (1 T) grated ginger or ginger matchsticks grated zest and juice of 1 lime 125 ml (½ c) chopped fresh coriander
4 white fish fillets or steaks salt and pepper 15 ml (1 T) olive oil juice of 1 lemon to serve
1 Salsa Mix the ingredients for the salsa and set aside for 15 minutes for the flavours to develop.
2 Fish Season the fish with salt and pepper. Heat the oil in a nonstick pan and brown the fish. Cover with a lid and steam-fry until done.
3 Season the fish with lemon juice and serve with the salsa.
