Fried fish with pineap­ple salsa

The pineap­ple salsa gives the fish a fresh, trop­i­cal taste.

4 por­tions


1 pineap­ple, diced or cut into match­sticks 1 small onion, chopped 1 red pep­per, diced 1 jalapeño chilli, chopped 15 ml (1 T) grated ginger or ginger match­sticks grated zest and juice of 1 lime 125 ml (½ c) chopped fresh co­rian­der


4 white fish fil­lets or steaks salt and pep­per 15 ml (1 T) olive oil juice of 1 le­mon to serve

1 Salsa Mix the in­gre­di­ents for the salsa and set aside for 15 min­utes for the flavours to de­velop.

2 Fish Sea­son the fish with salt and pep­per. Heat the oil in a non­stick pan and brown the fish. Cover with a lid and steam-fry un­til done.

3 Sea­son the fish with le­mon juice and serve with the salsa.
