Meatballs with pineapple and avo salsa
The pineapple and avocado salsa is also delicious with fish and chicken.
SALSA 12 small meatballs (4 portions)
250 g beef mince 1 small apple, finely grated pinch of ground cumin salt and pepper handful of chopped fresh coriander
Preparation time: 20 minutes Cooking time: 12-15 minutes
250 ml (1 c) diced pineapple 1 avocado, diced 250 ml (1 c) diced cucumber large handful chopped fresh coriander or rocket splash of rice vinegar
1 Preheat the oven to 180 °C. Grease a baking sheet with nonstick spray.
2 Meatballs Mix all the ingredients lightly and shape into 12 small meatballs. 3 Arrange on the baking sheet and spray well with nonstick spray. Bake until just done and still moist, about 12-15 minutes.
4 Salsa Mix the ingredients and serve with the meatballs.
