Cauliflower and broccoli salad
Miriam Swanepoel, a reader from Windhoek, Namibia, loves making this colourful and delicious salad for Christmas. 4-6 portions Preparation time: 10 minutes Cooking time: 2-3 minutes
125 ml (½ c) plain or Greek yoghurt
15 ml (1 T) balsamic vinegar
80 ml (¹⁄₃ c) olive oil
5 ml (1 t) black pepper
5 ml (1 t) paprika
1 small head cauliflower
1 small head broccoli
1 red onion, finely chopped
6 piquanté peppers, cut into strips
125 g diced bacon, fried until crisp
45 ml (3 T) almond flakes, toasted
10 ml (2 t) sunflower seeds, toasted
1 Dressing Mix the ingredients and set aside.
2 Salad Break the cauliflower and broccoli into bite-sized florets and place in a glass bowl with a little water. Microwave for 2-3 minutes or until just blanched. Drain and put in a salad bowl. Pour half the dressing over.
3 Scatter the rest of the ingredients on top and serve with the remaining dressing.
