GREEN BEAN SALAD
This is a great new way to serve green beans.
4 portions Preparation time: 10 minutes Cooking time: 10 minutes
60 ml (¼ c) olive oil
45 ml (3 T) red wine vinegar
5 ml (1 t) Dijon mustard
pinch of sugar
salt and pepper
500 g young green beans
450 g mixed mushrooms
Gruyère cheese shavings (optional)
pumpkin seeds or nuts
red chilli, seeded and chopped
pitted black olives
1 Vinaigrette Mix all the ingredients.
2 Salad Steam the green beans until just tender and pour the vinaigrette over.
3 Sauté the mushrooms until soft and add to the green beans.
4 Scatter the cheese shavings (if using), pumpkin seeds or nuts, rocket, chilli and olives on top.
