YOU Low Carb - - Salads -

This is a great new way to serve green beans.

4 por­tions Prepa­ra­tion time: 10 min­utes Cook­ing time: 10 min­utes


60 ml (¼ c) olive oil

45 ml (3 T) red wine vine­gar

5 ml (1 t) Di­jon mus­tard

pinch of sugar

salt and pep­per


500 g young green beans

450 g mixed mush­rooms

Gruyère cheese shav­ings (op­tional)

pump­kin seeds or nuts


red chilli, seeded and chopped

pit­ted black olives

1 Vinai­grette Mix all the in­gre­di­ents.

2 Salad Steam the green beans un­til just ten­der and pour the vinai­grette over.

3 Sauté the mush­rooms un­til soft and add to the green beans.

4 Scat­ter the cheese shav­ings (if us­ing), pump­kin seeds or nuts, rocket, chilli and olives on top.
