Peanut but­ter bars

These bars are packed with the good­ness of peanut but­ter and other fill­ing, protein-rich in­gre­di­ents and so easy to make.

10-12 bars

Prepa­ra­tion time: 10 min­utes Cook­ing time: 5 min­utes Chill­ing time: 3 hours, prefer­ably overnight

250 ml (1 c) creamy peanut but­ter 80 ml (¹⁄₃ c) honey 125 ml (½ c) but­ter pinch of salt 500 ml (2 c) oats 160 ml (²⁄₃ c) des­ic­cated co­conut 125 ml (½ c) mixed break­fast seeds 150 g peanuts 125 ml (½ c) apri­cot jam ex­tra jam for driz­zling Line a 20 cm x 20 cm square bak­ing dish with bak­ing pa­per and grease with non­stick spray. Set aside. 1 Add the peanut but­ter, honey, but­ter and salt to a pot over low heat. Stir con­tin­u­ously un­til smooth. 2 Add the oats, co­conut, seeds and peanuts and stir. Press half of the oats mix­ture into the bak­ing dish. Spread the jam evenly on top. Press the rest of the oats mix­ture on top and flat­ten with a spat­ula. 3 Re­frig­er­ate for 3 hours or overnight un­til firm. Cut into bars or squares. 4 For the driz­zle, spoon the jam into a small zip-seal bag and cut off a small cor­ner. Pipe across the bars and re­turn to the fridge un­til the jam is set.
