Peanut butter bars
These bars are packed with the goodness of peanut butter and other filling, protein-rich ingredients and so easy to make.
Preparation time: 10 minutes Cooking time: 5 minutes Chilling time: 3 hours, preferably overnight
250 ml (1 c) creamy peanut butter 80 ml (¹⁄₃ c) honey 125 ml (½ c) butter pinch of salt 500 ml (2 c) oats 160 ml (²⁄₃ c) desiccated coconut 125 ml (½ c) mixed breakfast seeds 150 g peanuts 125 ml (½ c) apricot jam extra jam for drizzling Line a 20 cm x 20 cm square baking dish with baking paper and grease with nonstick spray. Set aside. 1 Add the peanut butter, honey, butter and salt to a pot over low heat. Stir continuously until smooth. 2 Add the oats, coconut, seeds and peanuts and stir. Press half of the oats mixture into the baking dish. Spread the jam evenly on top. Press the rest of the oats mixture on top and flatten with a spatula. 3 Refrigerate for 3 hours or overnight until firm. Cut into bars or squares. 4 For the drizzle, spoon the jam into a small zip-seal bag and cut off a small corner. Pipe across the bars and return to the fridge until the jam is set.
