Pork sausage rolls

Mus­tard and pork go so well to­gether and sausage rolls are fill­ing and easy to make – this is also a great week­end sup­per op­tion.

4 rolls

Prepa­ra­tion time: 10 min­utes Cook­ing time: 15-20 min­utes

4 pork sausages

ONIONS

15 ml (1 T) but­ter 15 ml (1 T) olive oil 3 large onions, sliced salt and freshly ground black pep­per

MUS­TARD MAYO

125 ml (½ c) may­on­naise 15 ml (1 T) Di­jon mus­tard 30 ml (2 T) whole­grain mus­tard

TO AS­SEM­BLE

4 bread rolls, halved 80 g wa­ter­cress Pre­heat the oven to 180 °C. 1 Ar­range the pork sausages on a bak­ing sheet and roast for 15-20 min­utes or un­til cooked through. 2 Onions Heat the but­ter and oil and slowly fry the onions over medium heat un­til soft and caramelised. Sea­son with salt and pep­per. 3 Mus­tard mayo Mix the in­gre­di­ents. 4 To as­sem­ble Spread the rolls with the mus­tard mayo. Di­vide the wa­ter­cress among the rolls and top with the pork sausages and caramelised onions.
