Old-fash­ioned milk tart

Leila Ed­wards of Um­ten­tweni in Kwazulu-na­tal sent us her recipe for this old favourite which she bakes for all oc­ca­sions.

YOU Something Sweet - - CONTENTS -

1 tart Prepa­ra­tion time: 20 min­utes Cool­ing time: 40 min­utes Bak­ing time: 45-55 min­utes

PAS­TRY

250 ml (1 c) cake flour 125 g but­ter

15 ml (1 T) su­gar

FILL­ING

1,5 litres (6 c) milk

15 ml (1 T) but­ter

1 cin­na­mon stick

125 ml (½ c) su­gar

100 ml cake flour

100 ml corn­flour

1 ml (¼ t) salt

3 eggs, whisked

2 ml (½ t) ground cin­na­mon

Pre­heat the oven to 180 °C. Grease a 25 cm flan dish or bak­ing tin with non­stick spray.

1 Pas­try Mix the in­gre­di­ents to­gether, line the pre­pared dish or tin with the pas­try and bake for 10-12 min­utes. Cool com­pletely, at least 30 min­utes.

2 Fill­ing Put 1 litre (4 c) of the milk, the but­ter, cin­na­mon stick and su­gar in a saucepan and bring to the boil over medium heat.

3 Whisk to­gether the cake flour and corn­flour and salt with the re­main­ing milk un­til smooth. Pour the flour mix­ture into the hot milk and whisk un­til the mix­ture has thick­ened and come to the boil. Re­move from the heat and re­move the cin­na­mon stick. Set aside to cool for 10 min­utes.

4 Whisk in the eggs and pour the mix­ture into the crust.

5 Bake for 35-40 min­utes or un­til set. Re­move from the oven, dust with cin­na­mon and leave to cool be­fore serv­ing.
