Old-fashioned milk tart
Leila Edwards of Umtentweni in Kwazulu-natal sent us her recipe for this old favourite which she bakes for all occasions.
1 tart Preparation time: 20 minutes Cooling time: 40 minutes Baking time: 45-55 minutes
250 ml (1 c) cake flour 125 g butter
15 ml (1 T) sugar
1,5 litres (6 c) milk
15 ml (1 T) butter
1 cinnamon stick
125 ml (½ c) sugar
100 ml cake flour
100 ml cornflour
1 ml (¼ t) salt
3 eggs, whisked
2 ml (½ t) ground cinnamon
Preheat the oven to 180 °C. Grease a 25 cm flan dish or baking tin with nonstick spray.
1 Pastry Mix the ingredients together, line the prepared dish or tin with the pastry and bake for 10-12 minutes. Cool completely, at least 30 minutes.
2 Filling Put 1 litre (4 c) of the milk, the butter, cinnamon stick and sugar in a saucepan and bring to the boil over medium heat.
3 Whisk together the cake flour and cornflour and salt with the remaining milk until smooth. Pour the flour mixture into the hot milk and whisk until the mixture has thickened and come to the boil. Remove from the heat and remove the cinnamon stick. Set aside to cool for 10 minutes.
4 Whisk in the eggs and pour the mixture into the crust.
5 Bake for 35-40 minutes or until set. Remove from the oven, dust with cinnamon and leave to cool before serving.
