Whole­some brown­ies

Whip up a batch of brown­ies for the whole fam­ily – ev­ery­one is bound to love them and they’re packed with healthy in­gre­di­ents too!

About 30 brown­ies Prepa­ra­tion time: 5 min­utes Bak­ing time: 30-35 min­utes

500 ml (2 c) cake flour

125 ml (½ c) su­gar

90 ml (6 T) co­coa

10 ml (2 t) bi­car­bon­ate of

soda

250 ml (1 c) oat bran

160 ml (²⁄₃ c) oil

30 ml (2 T) grape vine­gar 10 ml (2 t) vanilla essence 500 ml (2 c) cold wa­ter

90 g dark choco­late

(80% co­coa solids), roughly chopped

1 can (400 g) pie ap­ples, mashed ic­ing su­gar for dust­ing

(op­tional)

Pre­heat the oven to 200 °C. Line a large roast­ing pan with bak­ing pa­per.

1 In a bowl, sift to­gether the flour, su­gar, co­coa and bi­car­bon­ate of soda. Add the oat bran and mix. Make a well in the cen­tre.

2 Whisk to­gether the oil, vine­gar, vanilla essence and cold wa­ter. Pour the mix­ture into the flour well and beat un­til well blended.

3 Fold the choco­late and pie ap­ples into the batter and turn into the pre­pared roast­ing pan.

4 Bake for 30-35 min­utes or un­til the crust has cracked slightly and the cake is still moist. Leave in the tin to cool then cut into squares. Dust with ic­ing su­gar, if us­ing.
