Whip up a batch of brownies for the whole family – everyone is bound to love them and they’re packed with healthy ingredients too!

500 ml (2 c) cake flour
125 ml (½ c) sugar
90 ml (6 T) cocoa
10 ml (2 t) bicarbonate of
250 ml (1 c) oat bran
160 ml (²⁄₃ c) oil
30 ml (2 T) grape vinegar 10 ml (2 t) vanilla essence 500 ml (2 c) cold water
90 g dark chocolate
(80% cocoa solids), roughly chopped
1 can (400 g) pie apples, mashed icing sugar for dusting
Preheat the oven to 200 °C. Line a large roasting pan with baking paper.
1 In a bowl, sift together the flour, sugar, cocoa and bicarbonate of soda. Add the oat bran and mix. Make a well in the centre.
2 Whisk together the oil, vinegar, vanilla essence and cold water. Pour the mixture into the flour well and beat until well blended.
3 Fold the chocolate and pie apples into the batter and turn into the prepared roasting pan.
4 Bake for 30-35 minutes or until the crust has cracked slightly and the cake is still moist. Leave in the tin to cool then cut into squares. Dust with icing sugar, if using.
