CRUSTLESS QUICHE

- 1 red onion, sliced 1 each red and orange pepper, diced 1 round reduced-fat feta cheese, crumbled 1 small handful of fresh coriander, chopped 1-2 small smoked chicken breasts, sliced (optional) 9 eggs, whisked with ½c low-fat milk ¹⁄₃ packet olives, c

SERVES 4 Preparatio­n: 15 min Cooking: 20-30 min 1 Preheat the oven to 180°C. 2 Grease a nonstick pan with nonstick spray and sauté the onion and peppers. 3 Remove from the stove and add the feta cheese, coriander and chicken (if using). 4 Add the whisked egg mixture and stir through. 5 Pour the mixture into a pie dish, top with the olives and bake for 20-30 minutes. TIP Serve with 1-2 slices low-GI bread for lunch. For dinner add a side salad of lettuce, tomato and cucumber.
