SERVES 4 Preparation: 15 min Cooking: 20-30 min 1 Preheat the oven to 180°C. 2 Grease a nonstick pan with nonstick spray and sauté the onion and peppers. 3 Remove from the stove and add the feta cheese, coriander and chicken (if using). 4 Add the whisked egg mixture and stir through. 5 Pour the mixture into a pie dish, top with the olives and bake for 20-30 minutes. TIP Serve with 1-2 slices low-GI bread for lunch. For dinner add a side salad of lettuce, tomato and cucumber.
