SERVES 4 Prepa­ra­tion: 15 min Cook­ing: 20-30 min 1 Pre­heat the oven to 180°C. 2 Grease a non­stick pan with non­stick spray and sauté the onion and pep­pers. 3 Re­move from the stove and add the feta cheese, co­rian­der and chicken (if us­ing). 4 Add the whisked egg mix­ture and stir through. 5 Pour the mix­ture into a pie dish, top with the olives and bake for 20-30 min­utes. TIP Serve with 1-2 slices low-GI bread for lunch. For din­ner add a side salad of let­tuce, tomato and cu­cum­ber.
