Pauline shares that she made a batch of these cof­fee cook­ies for a camp­ing trip soon af­ter she got mar­ried. The cook­ies were sup­posed to last the du­ra­tion of the holiday. “We pol­ished them off by day two!” she says.

MAKES ABOUT 24 SAND­WICH BIS­CUITS Prepa­ra­tion time: 10 min Bak­ing time: 10-12 min

250 g soft but­ter 180 ml (¾ c) ic­ing sugar, sifted 10 ml (2 t) cof­fee pow­der 15 ml (1 T) boil­ing wa­ter 500 ml (2 c) cake flour, sifted


50 g dark choco­late, melted

Pre­heat the oven to 180 °C and line bak­ing sheets with bak­ing pa­per.

1 Cream the but­ter and ic­ing sugar un­til pale yel­low. Stir the cof­fee pow­der into the boil­ing wa­ter and pour into the but­ter mix­ture. Beat well. 2 Stir the cake flour into the but­ter mix­ture. This will form a soft dough. 3 Spoon the dough into a pip­ing bag with a star noz­zle. Pipe rounds about 2 cm in di­am­e­ter, mak­ing sure they’re not too close to­gether. 4 Bake for 10-12 min­utes or un­til lightly browned. Al­low to cool on wire racks. 5 Fill­ing Sand­wich pairs of bis­cuits to­gether with a lit­tle melted dark choco­late.


These bis­cuits are re­ally quick to make – you can whip up a batch in no time in a mixer. I also like the fact that they do not con­tain a lot of sugar. And in­stead of be­ing sand­wiched to­gether with sweet ic­ing, a slick of dark choco­late gives it a health­ier fin­ish. Serve these tasty mouth­fuls with cof­fee af­ter a meal.
