Pauline shares that she made a batch of these coffee cookies for a camping trip soon after she got married. The cookies were supposed to last the duration of the holiday. “We polished them off by day two!” she says.
MAKES ABOUT 24 SANDWICH BISCUITS Preparation time: 10 min Baking time: 10-12 min
250 g soft butter 180 ml (¾ c) icing sugar, sifted 10 ml (2 t) coffee powder 15 ml (1 T) boiling water 500 ml (2 c) cake flour, sifted
50 g dark chocolate, melted
Preheat the oven to 180 °C and line baking sheets with baking paper.
1 Cream the butter and icing sugar until pale yellow. Stir the coffee powder into the boiling water and pour into the butter mixture. Beat well. 2 Stir the cake flour into the butter mixture. This will form a soft dough. 3 Spoon the dough into a piping bag with a star nozzle. Pipe rounds about 2 cm in diameter, making sure they’re not too close together. 4 Bake for 10-12 minutes or until lightly browned. Allow to cool on wire racks. 5 Filling Sandwich pairs of biscuits together with a little melted dark chocolate.
These biscuits are really quick to make – you can whip up a batch in no time in a mixer. I also like the fact that they do not contain a lot of sugar. And instead of being sandwiched together with sweet icing, a slick of dark chocolate gives it a healthier finish. Serve these tasty mouthfuls with coffee after a meal.
