This chicken dish was for special occasions and Cheryl and her siblings still make it exactly the way their mom did.
SERVES 6 Preparation time: 10 min Cooking time: 1 hour
1 whole chicken, cut into pieces OR
8 chicken pieces salt and black pepper 1 packet (45 g) white onion soup powder 250 ml (1 c) boiling water 250 ml (1 c) mayonnaise 250 ml (1 c) fruit chutney handful of thinly sliced spring onions and
green beans (optional) butternut OR salad to serve
Preheat the oven to 180° C. 1 Season the chicken with salt and pepper and arrange in a casserole dish. 2 Mix the soup powder well with the boiling water and add the mayonnaise and chutney. 3 Pour over the chicken and bake for 1 hour or until tender and golden brown. Garnish with spring onions and green beans, if using. 4 Serve with butternut or salad.
