This chicken dish was for spe­cial oc­ca­sions and Ch­eryl and her sib­lings still make it ex­actly the way their mom did.

SERVES 6 Prepa­ra­tion time: 10 min Cook­ing time: 1 hour

1 whole chicken, cut into pieces OR

8 chicken pieces salt and black pep­per 1 packet (45 g) white onion soup pow­der 250 ml (1 c) boil­ing wa­ter 250 ml (1 c) may­on­naise 250 ml (1 c) fruit chut­ney hand­ful of thinly sliced spring onions and

green beans (op­tional) but­ter­nut OR salad to serve

Pre­heat the oven to 180° C. 1 Sea­son the chicken with salt and pep­per and ar­range in a casse­role dish. 2 Mix the soup pow­der well with the boil­ing wa­ter and add the may­on­naise and chut­ney. 3 Pour over the chicken and bake for 1 hour or un­til ten­der and golden brown. Gar­nish with spring onions and green beans, if us­ing. 4 Serve with but­ter­nut or salad.
