SMOKED TOMATO CHUTNEY
MAKES ABOUT 1 LITRE Preparation time: 15 min Cooking time: about 1 hour
10 ml (2 t) mustard seeds 10 ml (2 t) coriander seeds 5 ml (1 t) fennel seeds 5 ml (1 t) black peppercorns
2 kg small Roma tomatoes, halved if necessary and smoked for 5-7 min (see advice, below) 6 onions, sliced into rings 500 ml (2 c) brown vinegar 750 g sugar 10 ml (2 t) salt 2 ml (½ t) ground ginger 5 ml (1 t) finely chopped garlic 2 star anise 5 ml (1 t) whole cloves
1 Spices Toast in a hot pan until it starts to smoke slightly, be careful not to burn. 2 Tomato mix Put the tomatoes (after they’ve been smoked), onions and vinegar in a fairly large saucepan and cook for 15 minutes. Blitz with a stick blender to a coarse consistency. 3 Add the sugar, salt, ginger, garlic, star anise, cloves and toasted spices. 4 Cook for about 45 minutes or until the chutney is no longer watery. Remove the star anise and cloves, if preferred.
