SMOKED TOMATO CHUT­NEY

SPICES

10 ml (2 t) mus­tard seeds 10 ml (2 t) co­rian­der seeds 5 ml (1 t) fen­nel seeds 5 ml (1 t) black pep­per­corns

TOMATO MIX

2 kg small Roma toma­toes, halved if nec­es­sary and smoked for 5-7 min (see ad­vice, be­low) 6 onions, sliced into rings 500 ml (2 c) brown vine­gar 750 g sugar 10 ml (2 t) salt 2 ml (½ t) ground ginger 5 ml (1 t) finely chopped gar­lic 2 star anise 5 ml (1 t) whole cloves

1 Spices Toast in a hot pan un­til it starts to smoke slightly, be care­ful not to burn. 2 Tomato mix Put the toma­toes (af­ter they’ve been smoked), onions and vine­gar in a fairly large saucepan and cook for 15 min­utes. Blitz with a stick blender to a coarse con­sis­tency. 3 Add the sugar, salt, ginger, gar­lic, star anise, cloves and toasted spices. 4 Cook for about 45 min­utes or un­til the chut­ney is no longer wa­tery. Re­move the star anise and cloves, if pre­ferred.
