How to smoke the toma­toes: Mix 125 ml (½ c) raw rice, 60 ml (¼ c) each Rooi­bos and Earl Grey tea leaves, 60 ml (¼ c) brown sugar, 3 crushed gar­lic cloves and 4 torn bay or lemon leaves. Wrap in alu­minium foil, fold closed, make a few holes on top and place inside an old pot. Place the toma­toes on a rack over the foil. Heat un­til the tea leaves start to smoke then close with a lid. Smoke for 5-7 min­utes. Don’t smoke for too long or the toma­toes will be­come bit­ter.
