500 g small Rosa tomatoes, halved 1 red onion, finely chopped 1 red chilli with seeds, finely chopped 150 g soft brown sugar 90 ml (6 T) red wine vinegar 5 ml (1 t) fresh rosemary leaves, chopped
1 Put all the ingredients in a heavy-based saucepan. 2 Bring to the boil while stirring all the time. Reduce the heat and simmer uncovered for 30-40 minutes or until thick and jam-like and no longer runny.
