125 ml (½ c) full-cream milk 125 ml (½ c) cream 1 vanilla pod, slit and seeds scraped out 3 egg yolks 50 g sugar
1 Bring the milk, cream and vanilla pod (with the seeds) to just below boiling point. Allow to cool slightly. 2 Whisk the egg yolks and sugar together until pale. 3 Whisk the cream mixture into the egg mixture and pour through a sieve back into the saucepan. 4 Stir over low heat until the mixture thickens and is cooked (see tip, right).
