MAKES ABOUT 250 ML (1 C) Prepa­ra­tion time: 5 min Cook­ing time: 5-8 min

125 ml (½ c) full-cream milk 125 ml (½ c) cream 1 vanilla pod, slit and seeds scraped out 3 egg yolks 50 g sugar

1 Bring the milk, cream and vanilla pod (with the seeds) to just be­low boil­ing point. Al­low to cool slightly. 2 Whisk the egg yolks and sugar to­gether un­til pale. 3 Whisk the cream mix­ture into the egg mix­ture and pour through a sieve back into the saucepan. 4 Stir over low heat un­til the mix­ture thick­ens and is cooked (see tip, right).
