FOOD TO MAKE FOR NEW MOMS
Being a new mother comes with all sorts of demands on your time. You have a lot to do and figure out and very little time to even think about food. Here are some easy, nutritious recipes you can make ahead and freeze before your due date. Or show these recipes to family and friends to make you some meals you can pop into the freezer for the days when you just can’t face spending another minute in the kitchen – or on your feet.
All meals serve 4
3 tablespoons butter or olive oil 8 eggs 4 tablespoons water 4 cups baby spinach 1 cup cherry tomatoes, halved 1 cup grated cheddar cheese or crumbled feta cheese 4 flour tortillas or cauliwraps (available from Woolworths)
1 Melt 2 tablespoons butter or oil in a non-stick pan over medium heat. Whisk the eggs and water and pour into a warm pan. Stir occasionally until the eggs are cooked. Stir in a little salt and cracked black pepper and transfer to a plate to cool.
2 Wipe out the pan, put back on medium heat and add another tablespoon of butter or oil. Fry the spinach and tomatoes for a few minutes, stirring frequently. Transfer to another large plate to cool.
3 Divide the scrambled eggs between the four wraps. Top each with about a quarter of the spinach and tomato mixture, then sprinkle some cheese over before you roll up your wrap (fold in the sides, then roll from bottom to top). Place each wrap on a sheet of tin foil and swaddle. Place each foil covered wrap in a freezer sandwich bag and freeze until needed.
4 To reheat, remove foil from wrap and microwave on high for 2 minutes.
