Jew­elled scrum­bled eggs

1 ta­ble­spoon olive oil 2 but­ton mush­rooms, wiped and chopped ¼ red pep­per, washed and cut into small cubes hand­ful spinach leaves, washed and shred­ded ½ spring onion, washed and sliced 2 eggs

1. Heat oil in a pan and fry veg­eta­bles for a few min­utes un­til soft.

2. Mean­while, crack the eggs into a bowl and whisk with a fork. Add eggs to the pan and stir un­til cooked.

3. Serve as is or with a lit­tle grated cheese for ex­tra flavour.
