Jewelled scrumbled eggs
1 tablespoon olive oil 2 button mushrooms, wiped and chopped ¼ red pepper, washed and cut into small cubes handful spinach leaves, washed and shredded ½ spring onion, washed and sliced 2 eggs
1. Heat oil in a pan and fry vegetables for a few minutes until soft.
2. Meanwhile, crack the eggs into a bowl and whisk with a fork. Add eggs to the pan and stir until cooked.
3. Serve as is or with a little grated cheese for extra flavour.
