Egg & banana flapjacks
2 bananas 2 eggs 1 tablespoon butter or oil for frying
1. Mash the bananas in a small bowl and whisk in the egg. 2. Heat the butter or oil in a nonstick pan over medium heat and fry spoonfuls of the egg mixture for 2-3 minutes on each side. Remove from pan and let cool on paper towel. 3. Serve with yoghurt and fresh fruit.
