Smoked chicken salad wraps

6 slices white or brown bread 1 avo­cado 15ml may­on­naise

1 car­rot, peeled

1 smoked chicken breast, sliced into thin strips small hand­ful let­tuce, shred­ded 1 Roll out the bread as thinly as pos­si­ble with a rolling pin. Cut off the crusts. Mash to­gether the avo and may­on­naise. Sea­son. Spoon the avo mix­ture into lengths on the bread slices. 2 Use a juli­enne peeler or grate the car­rot. Top the avo with the car­rot, chicken and let­tuce. Roll up the ‘wraps’ to en­close the fill­ing and se­cure with string.

Bread is a great ‘wrap’ sub­sti­tute for lunch­boxes. Just mix a squeeze of le­mon juice through the avo and car­rots to pre­vent brown­ing.
