Smoked chicken salad wraps
Takes 25 mins
6 slices white or brown bread 1 avocado 15ml mayonnaise
1 carrot, peeled
1 smoked chicken breast, sliced into thin strips small handful lettuce, shredded 1 Roll out the bread as thinly as possible with a rolling pin. Cut off the crusts. Mash together the avo and mayonnaise. Season. Spoon the avo mixture into lengths on the bread slices. 2 Use a julienne peeler or grate the carrot. Top the avo with the carrot, chicken and lettuce. Roll up the ‘wraps’ to enclose the filling and secure with string.
Bread is a great ‘wrap’ substitute for lunchboxes. Just mix a squeeze of lemon juice through the avo and carrots to prevent browning.
