Sausage and potato nests

3 tortillas, halved
6 eggs 125ml thick cream handful parsley, chopped handful cooked baby potatoes, quartered
30cm chorizo sausage, thinly sliced 125ml feta, crumbled handful cherry tomatoes sweet chilli sauce, to serve sprouts, to serve (optional) 1 Preheat oven to 200°C. Line a jumbo 6-hole muffin pan with overhanging baking paper.
2 Line the prepared muffin tray with the tortilla halves, making sure there are no gaps for the filling to run out. 3 Combine the eggs, cream, parsley and season. Pour into the prepared muffin tray.
4 Add the potatoes, chorizo, feta and tomatoes. Bake for about 25 minutes or until golden and set all the way through. Serve with sweet chilli sauce and sprouts.
