Valentine’s recipes
½ cucumber, halved and seeded, then cut into tiny cubes 1 red bell pepper, finely chopped 2 rosa tomatoes, chopped ½ red onion, finely chopped 1 garlic clove, crushed 2 cups tomato juice ¼ cup red wine vinegar ¼ cup extra virgin olive oil ½ teaspoon sea salt ¼ teaspoon ground black pepper Combine the cucumber, bell pepper, tomatoes and onion in a large bowl or jug. Add the garlic, tomato juice, vinegar, olive oil, salt and pepper. Mix well and chill before serving.
