One-bowl super food meals

1T olive oil 4 spring onions, sliced (white and green parts separated) 1 carrot, peeled and cut into ribbons using a vegetable peeler 4-6 shiitake mushrooms, stems removed and sliced 1 clove garlic, crushed 1T fresh ginger, grated 4 cups vegetable stock 1T light soy sauce 2 rounds of medium egg noodles (or use rice noodles) 2 pak choi, sliced (separate stems and leaves) 2t fresh lemon juice sea salt and black pepper 2 soft-boiled eggs (optional) Method: 1. Heat oil in a heavy-based saucepan over medium heat. Fry the whites of the spring onions, carrots and mushrooms for about 5 minutes. Add the garlic and ginger and fry for just a minute until fragrant, then pour in the stock, soy sauce and pak choi stems. Bring the mixture just barely to a boil, reduce heat and simmer for 15 minutes. 2. Add the noodles and pak choi leaves and continue to simmer for 4-6 minutes or until the noodles are just tender. Add lemon juice and check seasoning. 3. Transfer to two bowls and serve topped with a soft-boiled egg (if using) and spring onion greens.
