SALMON SKEW­ERS

2 salmon fil­lets, skin off

2 lemons, thinly sliced

2 ta­ble­spoons olive oil

2 tea­spoons se­same seeds

1 tea­spoon ground cumin

¼ tea­spoon crushed red pep­per flakes salt and pep­per

8 bam­boo skew­ers soaked in wa­ter for 1 hour

1 Cut salmon into 2cm cubes and thread onto bam­boo skew­ers al­ter­nat­ing with a slice of lemon folded in half. Set aside. 2 Mix olive oil, se­same seeds, cumin and pep­per flakes and driz­zle over the salmon skew­ers. Sea­son with salt and pep­per. 3 Braai over medium coals for a cou­ple of min­utes on each side un­til fish is opaque through­out, about 8-10 min­utes in to­tal. Serve with coleslaw or a green salad.
