By Joe Wickman VALENCIA will submit a proposal to the UNESCO for the traditional rice dish to become part of the world heritage.

The institutional declaration was proposed by the PP and approved by all parties, with the governing team going so far as to immediately create a team of experts who will work to obtain the merit and more international recognition.

The declaration starts by explaining that ‘the paella is the centre of Valencia prov- ince’s gastronomic tradition’, and adds to its bid by saying that ‘the paella is tied to festive practices in our land’, as the UNESCO considers foodstuffs if they have a significant ritual, art or cooking method associated to them.

Government representatives said they believe the UNESCO bid will be successful as they look for a mix of tradition and modernism, inclusiveness, that it represents a certain geographic location and that it involves the entire community – all of which the paella accomplishes in spades.
