Ice is Nice

Using ice as the main concept rather than a side element, mixologist Sean Halse and his team say goodbye to drinks diluted by regular ice with cocktails made using flavour-infused ice that increasingly complements the drink as it melts. The cocktails are separated into three categories: Ice Granita, Ice Series and Ice Poptails. For a zesty surprise try the Fire & Ice from the Iced Granita series, a blend of Chivas Regal with coconut water and vodka over a chilli-lemongrass-kaffir lime granita. Those who prefer something fruitier can opt for the exotic Mango Sticky Rice comprising premium cachaca blended with coconut rum and almond syrup and served with jasmine-mango-almond flavoured ice cubes. For something more nostalgic, awaken your inner child with the Ice Poptails and fruity popsicles.
