“The staff costs should be built into the price, ser­vice charge should al­ways re­main at the dis­cre­tion of the guest, to re­ward good ser­vice, and it should go di­rect to the staff, the venue shouldn’t get in­volved. Forc­ing a ser­vice charge is al­ways go­ing to be a bone of con­tention, es­pe­cially in a city where ser­vice is reg­u­larly poor.”
