Ingredients • 3 extra-large egg whites • 200g (1 cup) caster sugar • 5ml (1 tsp) vanilla extract • 80g dark chocolate, melted Method 1 Whisk the egg whites using an electric mixer until stiff peaks form. 2 Gradually add the caster sugar, beating continuously until the mixture is thick and glossy and the sugar has dissolved. 3 Beat in the vanilla, then gently swirl in the chocolate so that the mixture is streaky. Pipe or spoon meringues on to a baking tray lined with baking paper and bake in a preheated oven at 120ºC for about 30 minutes. 4 Turn the oven off and leave the meringues in the oven to cool for an hour. Remove from oven and cool completely on a wire rack. Makes about 12-18, depending on size.
