GRIDDLE CAKES WITH CHEESY CHICKEN FILLING
Makes 6 griddle cakes Preparation time: 15 minutes Resting time: 10 minutes Baking time: 15 minutes Ingredients • 1kg ready-made bread dough Filling • Half a packet mixed salad greens • 2 smoked chicken breasts, cut into diagonal slices • 4-6 gherkins, thinly sliced • 125g cheese, sliced • 60ml onion marmalade Method Griddlecakes 1 Put the dough on a floured surface and make a long roll. Cut it into 4cm-thick slices and flatten each slice slightly to make a cake. Leave to rise until doubled in size. 2 Heat an ungreased griddle pan until very hot. Put a few griddle cakes in the pan at a time and heat until brown on both sides and done in the middle. 3 Cut the cakes lengthways and butter them if desired. Filling 1 Layer the greens, chicken slices, gherkins and cheese on one half of the cake. 2 Spoon the onion marmalade on top and cover with the remaining half.
