GRID­DLE CAKES WITH CHEESY CHICKEN FILL­ING

Makes 6 grid­dle cakes Prepa­ra­tion time: 15 min­utes Rest­ing time: 10 min­utes Bak­ing time: 15 min­utes In­gre­di­ents • 1kg ready-made bread dough Fill­ing • Half a packet mixed salad greens • 2 smoked chicken breasts, cut into di­ag­o­nal slices • 4-6 gherkins, thinly sliced • 125g cheese, sliced • 60ml onion mar­malade Method Grid­dle­cakes 1 Put the dough on a floured sur­face and make a long roll. Cut it into 4cm-thick slices and flat­ten each slice slightly to make a cake. Leave to rise un­til dou­bled in size. 2 Heat an un­greased grid­dle pan un­til very hot. Put a few grid­dle cakes in the pan at a time and heat un­til brown on both sides and done in the mid­dle. 3 Cut the cakes length­ways and but­ter them if de­sired. Fill­ing 1 Layer the greens, chicken slices, gherkins and cheese on one half of the cake. 2 Spoon the onion mar­malade on top and cover with the re­main­ing half.
