Ce­viche with chilli and lime dress­ing

1 Ar­range the slices of sh on plates or on a large serv­ing dish. Driz­zle with lime juice, wrap in cling lm and mar­i­nate in the re­frig­er­a­tor for around 15 min­utes. 2 Take the sh out of the re­frig­er­a­tor and scat­ter over the spring onions, chilli and dill. Driz­zle with oil. Sea­son with crushed black pep­per and smoked sea salt, and serve.
