Square the quar­tered toma­toes and sea­son. Line a 750ml ter­rine with cling film, leav­ing a 25cm over­hang. Pour a layer of gaz­pa­cho to cover base of the ter­rine and re­frig­er­ate for three min­utes un­til the gelatin be­gins to set. Add a layer of tomato con­fit. Pour a sec­ond layer over the tomato con­fit, press the tomato into the gaz­pa­cho and re­frig­er­ate for three min­utes. Con­tinue to layer the ter­rine un­til full, fin­ish­ing with tomato con­fit.
