Soak the halloumi in milk 24 hours prior to use Heat a frying pan with a little oil and when hot, sear the cheese slices until deep golden.
Sear the beef fillets on a hot grill or frying pan and cook until pink. Allow to rest. In a hot frying pan, brush the sliced cucumber rounds, then sear until well coloured on both sides. Dress the dish in a rustic fashion, add halloumi, drizzling with the dressing to finish.
