Prep time: 15 mins In­gre­di­ents 180g canned tuna in oil, drained 40g baby pota­toes, boiled, peeled and halved 40g toma­toes, cut into wedges 40g cu­cum­ber, cut into ba­tons 2 tsp olive oil 2 tsp chopped pars­ley 1 tsp ca­pers 30g long beans, blanched and roughly chopped 1 tsp green pep­per­corns 1 tbsp pit­ted black olives 1 boiled egg, cut into wedges 1 tbsp onion rings, mar­i­nated in salt wa­ter un­til pink 1 tbsp lemon juice 1 ba­nana leaf, to serve Method: 1. Mix to­gether tuna, pota­toes, toma­toes, cu­cum­ber, olive oil, pars­ley, ca­pers, long beans, pep­per­corns and olives. 2. Sea­son well and place on top of ba­nana leaf in salad bowl. Gar­nish with egg, onion rings and lemon juice. Serve im­me­di­ately.
