Prep time: 15 mins Ingredients 180g canned tuna in oil, drained 40g baby potatoes, boiled, peeled and halved 40g tomatoes, cut into wedges 40g cucumber, cut into batons 2 tsp olive oil 2 tsp chopped parsley 1 tsp capers 30g long beans, blanched and roughly chopped 1 tsp green peppercorns 1 tbsp pitted black olives 1 boiled egg, cut into wedges 1 tbsp onion rings, marinated in salt water until pink 1 tbsp lemon juice 1 banana leaf, to serve Method: 1. Mix together tuna, potatoes, tomatoes, cucumber, olive oil, parsley, capers, long beans, peppercorns and olives. 2. Season well and place on top of banana leaf in salad bowl. Garnish with egg, onion rings and lemon juice. Serve immediately.
